There's no income requirement if it's a spouse application. They want the Option C to show the sponsor isn't on welfare. So not sure if the P60 would help at all. I'm sure others have been in a similar position, so hopefully someone else can give you some ideas on what else you can provide.
One person who lived overseas was told by CIC that because it's a spousal sponsorship, income is irrelevant and she did not have to send in any tax documents and could write N/A anywhere it asks for income. However, I don't think there is anything wrong with sending your tax papers from the UK and write a cover letter explaining that you are living in the UK and therefore don't have a C-printout.

I am French Citizen living and working in the UK for several years with my spouse who is Canadian Citizen. I am willing to move to Canada and settle there with my Canadian Spouse. What options we have to start the settling process (getting PR etc.).The Canadian immigration website is not much helpful and less informative.
