However, I want to go back home for the holidays and come back in January. If I don't receive my visitor record by then can I still re-enter and stay in Canada? And I do have an eTA passport. 1. Once you leave, your visitor application ends.
2. As long as you have a valid ETA you could return, no guarantee of admission though or how long you would be admitted for.
But will I still be able to stay in the country if I receive my work permit while I am away? I know I will be able to return to get into the country since I have an eTA passport, but I won't be able to show them that I received my work permit since the paper copy is going to be in my mail.

Yes you can try to reenter Canada as a visitor if you have an ETA. Whether you have been approved for a WP will be in the immigration system although I would travel with online proof of approval.
