In case I show previous work experience but I quit my job and decide to start off something on my own or go self employed which is unrelated to the NOC I am applying for or travel around the country, will it be a ground for rejection?
My work experience in my desired NOC in several companies is as follow:
June 2009 to August 2010: NOC 0XXX
From September 2010 until July 2014: I pursued higher education and worked in lower level job.
August 2014 to December 2014: NOC 0XXX
January 2015 to October 2015: NOC 0XXX
November 2015 till date (planning to quit soon): NOC 0XXX
How many years years of foreign work experience can I claim points for? Over the last 10 years, its 3 years or more but there has been a break in the NOC for around 2 years. How will my points be calculated?
I have not yet interest the pool as I am waiting for my wife's WES evaluation.

But the problem with your experience seems to be that you don't have continuous minimum 3 year (1560 Hrs per year) in the last 10 years which is a min requirement to qualify for EE.

The "continuous" requirement only applies to one year. After that one year requirement has been met, it does not matter whether it is continuous or not. In the OP's case the 1 year continuous requirement has been met, and it looks like s/he has 3+ years of cumulative foreign work experience.
Also - the "1560 hours" only applies to part-time work. If you are full-time (30 or more hours per week), you just count weeks / years.
