I am about to complete my 2 year experience in February. But my express entry points got added automatically with 2 years of experience in January.

It doesn't consider the date of the month, only the month itself. So, even if you started the job on the last day of February, the system gives you the points in January. You should accept an ITA only when you complete the 2 years.

Accept it but submit your application after you have actually completed 2 years. It’s a known issue to IRCC

There are cases when people accept the ITA, wait for 1 month and then submit the application.
While technically speaking, your points at the time of ITA should be accurate and post-ITA is just a proof of your pre-ITA information, the aforementioned issue is not your fault.
