So our work permits are expiring at the same time, so will it be OK if i first apply for a BOWP, and once i get it i apply for my wife's Open work permit or we should file for both work permits at the same time ? kindly suggest

Apply for her permit once you get yours. Her permit depends on your status.

We mentioned in her form . Applying for Open Work permit dependent on Spouse Bridging OPEN Work permit .
And mentioned this in our cover letter too.
We have paid fees for both .

Realistically, One after the other (If the principal applicant has a valid status, dependant always get one), or with a detailed cover letter as our friend did (Let's not worry him).
Guys, is it advisable to include a letter of employment for your current employer in the BOWP application?

If those are questions about the employer then yes, or put 'N/A - BOWP Application' in those fields.
I'm not sure if those are required fields or can be left blank.

Like i have two full time jobs..and i ll need OWP so that to continue working there..

Yes, do that. Don't provide any information about employer as this might
result in a closed work permit.
