I came to Canada with a work permit, here i met my now wife, we have been married for a year and together for 5, and we have a 3 year old child together. We are now in the process of sending our application for permanent residence. I would just like to know if it's a good idea to ask my former employer to write us a support letter.
 
It won't do any good unless your employer is a friend or someone who has spent time with you and your wife enough to know you guys are a genuine couple.
 
She knows us and have spent time with us. Well, once.. A day we went on a road trip and stopped over her house for about 2 hours..

A 5 year relationship with a child and married over a year... your case is already very solid and should have no problem being approved. No need at all to go out of your way for extra support letters from old employers.
