I am completing my 2 years of experience on May 15 but i already received my ITA in the latest draw... So should I submit my documents by accepting the same ITA or do I need to wait until May 15??

I was out of canada for 2 weeks on paid vacation (benefits). Will those hours will be count under Canadian Experience Class or I have to work 2 weeks extra to cover those 2 weeks?
Hours in my paystub are like this:
For 16 sep-30 sep = total 80.2 hours, out of which 65 regular hours and 15 vacation benefits hours
For 1 Oct-15 Oct = Total 75.50 hours, out of which Statutory hours are 8 and Vacation benefits hours are 67.50
In Canada, there are statutory holidays and those are paid hours
My actual date to finish 2 years experience in Canada is july 5,2018 and on June 1,2018 my points will be 450 as I will get extra points earlier according to CIC express entry profile. So, should I work now 2 weeks extra to cover those paid vacation hours or I will be fine if I submit my application on July 6,2018 ?

Are we going to have Ontario sending their potential NOIS today? As per their relevancy they should send their NOI in 430's range asap or else it would be too late to pick up the potential candidates for their province as they will get direct ITA in the summer

No you dont have to do anything else. You will get NOI if you are above oinp crs cut off and your NOC is in demand. To my knowledge, NOC in demand list has not been published for this year.
