I am currently in Canada as a Canadian citizen and I am with my girlfriend from Italy. She came here on February 8th, 2021 on a visitor visa and as a Extended Family Member. Her visitor visa expires on August 8th 2021, and the Extended Family Member approval said she is valid to come here until May 30th, 2021. Is she able to extend her visitor visa and stay here longer than 6 months? And do I have to re-apply for the Extended Family member approval to extend that date as well?

If she is already in Canada, then she would simply apply to extend her stay from within Canada. The authorization letter is only needed for those traveling and not yet in Canada. She needs to follow this process:
