I received a letter from CIC in the mail January 9th saying that my PR has been accepted (woohoo!) and that it has been sent to the Ottawa CIC office and I need to wait for them to contact me to come into the office and pay the $490 fee. My question is, what will the process entail? Am I just going there with my wife to sign documents, pay the fee and go off on my merry way? Or will I have to sit down for an interview?
Yes, that's basically whats going to happen. You'll pay the fees, go into a room with the officer who will check ID documents and ask a couple questions (has there been any criminality since the application etc?), tell you about the rights and responsibilities of being a Permanent Resident, confirm your address for the PR card and that's about it. There will be no "interview" in the sense of asking about your relationship- CIC has made their mind up already.
It's a very non-intimidating and happy occasion, in my opinion.

AMB- Thank you for the great info! I have never had a criminal record. Will my wife be asked to be there at the time of this whole process? Or just me? Will she have to sign anything? Or will it just be me that needs to show up? Thanks again
I suppose you could go alone- the letter is addressed to just you.
It most likely isn't a problem for your wife to go in the room with you. Depending on the office, they'll either let you come in together or just ask you to come in.
I believe most couples go together- it's a momentous occasion.
