Submitted June 20th, no updates yet (ADR or AOR). Had called IRCC office and the agent said they can confirm the application is there and the AOR will be sent out only once the reviewing officer does their checking etc. I think the key is to be patient for now and thats what i am doing, waiting.

Did they talk to you as the sponsor? I’m wondering if when I call my dad as the principle applicant has to talk to them? Or authorize them to talk to me while on the call?

The agent had verified the information (like UCI# etc.) with me so yes they will verify first if you are the rep and then inform you the status
 
Hello. Just wondering what will happen when I resigned my current job? Will it affect my application that’s already in process? Cic already asked for my parents PCC. Do I need to update my application just in case I resigned? I am planning to go to school by the end of the year and worst case scenario if time does not permits I’ll be resigning.

You need to continue to meet your income requirement until their application is completed.
If you still meet the income requirement, resigning a job doesn't matter. (Some people have other income source or they made enough of the year before they resigned.)
They can request income update any time during the process. But they don't do it for ALL applications. Again, your income matters. Not if you have a job or not.
