Do you have any idea if as the sponsor, I could call? Or would it need to be the principal applicant who calls? Also - what information will we need to provide?

As the sponsor, you can call since this is the beginning of the application process; the PA would have to call if this was the second portion of the process, when their application for permanent residence is being processed at the visa office.
Info to have on hand when you call: name, birth date, birthplace of both the sponsor and PA. It's also helpful to have your receipt number from when you paid the application fee, since they might be able to look it up by that number too.
What's everyone's timeline so far? I got aor1, pcc and sched. A request on January 9th, submitted November 9th, I got medical request that I am doing on Monday, and I got sponsor approval and aor2 last night.
I just reread the forms we filled out and submitted. On the IMM 1344 form where it asks relationship to principle applicant I put Common Law Partner Living in Canada but know I should have selected Common Law Partner Living Outside of Canada. I suppose this means they will send it back for us to correct before we can progress? Currently that status is Sponsorship Application Status: In Process as of the 11th of January 2018. Permanent Residence Application Status: Received as of the 16th of December 2017.

If I were you, I would contact IRCC immediately to inform them that you ticked the wrong option. There are quit scenarios it may go, they might return your application, they might understand and accept that you ticked the wrong option and just let it go to keep processing as outland application, or worst that they might keep processing to a point then properly refuse your case. The safest way for you is to contact them NOW.
