What happens in the case of not being able to land a co-op job, when working is mandatory to complete studies and apply for a PGWP? If I don't land a CO-OP job, am I able to prove to the IRCC that I have been going through an extensive job search instead? And is there anything I could possibly do to remain a full-time student if I can't find a co-op?

Change to a course that doesn't require a co-op or get a job who is willing to do a LMIA for you. Why are you so confident that you will not get a co-op job ?

I am just dubious honestly. My program is in the field of IT, and I am very scared I don't find a CO-OP because a lot of people here didn't find from what I seen.

You can't use a forum as an example of how easy or hard it is. People who have issues or problems will be more likely to post here.
Also the sample size of this forum is minuscule compare to the total student population.
You can prepare for it by just googling co op jobs it Canada or whatever city you are going to and see what the job requirements are and prepare. To be honest if you can't get a co op job you will find it very difficult in Canada as most jobs are done through referrals.
You need to network with your classmates and professors and get recommendations. That will help you secure a co-op.
This is a big problem for a lot of students, most colleges do very little to help them get them a coop, they mostly just share a list of a few employers and nothing else. Check this discussion https://redd.it/as1s0z
So check how much support your school actually provides otherwise consider switching to a non coop program.
I *think* i notice that some colleges have the EXACT same programs but some colleges have a co-op program requirement in it and some dont.if im correct could a student transfer to a school that does not require a co-op in the last semester to graduate if they cant find a placement?

From what I understood you will drop out of the course with the co-op and do another course without co-op. If this is the case then you will get PGWP only for the second course you took and not the first one.
