I have been living and working abroad for the past 5 years, and as a result have not filed Canadian taxes which means I do not have an Option C.
I have written and hand-signed a short letter attached to the form related to Option C explaining this and attached to that my last 12 months pay slips from my employer where I currently live as well as an employment letter.
Short background - I'm sponsoring my wife as a PR outland and we both live outside of Canada.
Will these supporting documents suffice, or will it be a question mark for them?

Well, if you have not not been physically present in Canada for 2.5 years out of any 5 year period, you will have lost your PR status. You will have to check with CIC if you are still considered a PR of Canada.

After extensive reading on the CRA website I understand Canadians living and working abroad for a number of years who have no primary residential ties to Canada, such as is my case, are considered non residents for income tax purposes.
That being said, since I didn't file taxes for 2014, I can't have an option C printout, but I can provide the other supporting documents I mentioned.

Well, if you are sure you are considered a non-resident for income tax purposes, then what you are sending might hold good. I suggest you to take the help of an experienced immigration lawyer to handle any complications that might arise later.
I never officially declared a non resident, but I had a long call with the CRA to discuss this and I was just advised to file when I'm back mentioning the date I officially returned.
How would you anticipate this would affect my application or cause issues to arise later?
My sponsor (husband - Canadian citizen) has been out of Canada for 16 years. We supplied bank statement showing salary payments and that seemed to be fine.
