We plan to move to Canada by July 1st, even earlier would be preferable - May or June.
Our application still hasn't been received yet.
My wife is only permitted to stay as a visitor in Canada for 6 months. With the 12-month waiting time, we would need more like 9 months.
Will she get kicked out of Canada from her family after 6 months, or is there any kind of visa or visitor extension she can apply for to ensure she can stay with us in Canada until the application is processed?

So you have sent your application into CPC Mississauga right (is it just that they haven't acknowledged it yet)?? If so, then unless there is something horribly wrong with your pack, you should easily be Sponsor Approved by May.
Note that the 6 month visitor visa is not guaranteed, it is at the discretion of the CBSA officer (although most seem to be happy granting 6 months).
You can apply for an extension closer to the end of the visitor visa if the CoPR has not come through by then. Of course while there as a visitor, the PA cannot work.
