I have submitted my application on paper and have seen it has reached sydney on the beginning of March. I am awaiting for the AOR now but I do not know if I should / should not receive an email confirmation that they have aknowledge receipt of it. Did anyone receive such email upon sending paper application?
At this stage you will not receive any email. Only after your application has been reviewed and deemed complete, an AOR will be emailed to you. Current trend is 2 months after delivery date.

My spouse was on visitor visa and through inland spousal application, she got open work permit first and then eventually PR.
So from the time of arrival to Canada, until she got a PR, will it be treated as a visitor Visa? or when she gets open work permit, it is called something else?

The time your spouse held visitor status is called and treated as "Visitor", and the time covered by the work permit is called "Temporary Resident Permit Holder". Both will count in the calculation, but they are just called different.
If second ID doesn’t have a photo on it, will it be accepted? I have Quebec ramq health card and they don’t issue photo on it.
Alberta and Quebec don’t have photo on health cards.

That's weird; mine have, and I kept my old RAMQ cards, and they have photos on them too. You might be able to switch if you want.
Anyway, the requirements for ID for citizenship applications are that you must provide at least two documents, both pieces of ID must show name and date of birth, and at least one document must have a photograph.
