I suggest you to call service Canada, There is always a situation which you can get your new SIN if you have your COPR and your stamped passport together.

Yeah, I still have my temp work permit and my SIN expires on the 21st of this month. The lady told me to just tell my employer to wait until I get my PR card. Ah well.

In that case, don't worry about it. You temp SIN is sufficient even after it expires, I believe, given that you're legally able to work as soon as you land as a PR. Show your employer your landing documents and tell them you'll have your SIN in a few months.
My wife Anna should squeeze by barely before her SIN expires. Based on your timeline I am expecting she will land early December and then have her PR card early February ( oh wait a minute. CHRISTMAS! That should cause a nice delay.) Her SIN expires in March.

Hard to know how they order the interview dates. What letter does your last name begin with? Anna's Last names begins with B. So, if they are ordering it alphabetically, she is more like to be interviewed first.
