To what level is the education history submitted? (Just undergraduate and masters or even higher and higher secondary as well?)
Also, is ECA required for each one of them or just for the highest degree?

In the 'Study & languages section' you only need to mention post-secondary studies.
No need to mention secondary studies.
You should submit ECA reports for 'EACH' credential you are claiming points for.

It won't give you more points, but I suppose WES requires both certificates and transcripts to be sent to them. Check your country's specific requirements.

Some people say it's better to get ECA done for each credential you have.
If not for immigration purpose, it'll be helpful to be recognised in Canada once you land there and search for jobs.
I recommend getting only your highest level of education reviewed for an ECA. Agencies like IQAS only look at that degree and are just as fast as WES
