you could.. but i think when you do your landing the officers at the border will also ask you for your address.. im thinking of just updating them with my home address when i get there (on the 26th).
Im looking at this One time entry Visa that they put on my passport. Im assuming this is the one that they will look at the borders for my landing. I plan on going for a Vacation this coming April, by that time I should have a PR card, is that enough to come back to Canada? Im assuming I wont need any re-entry as a PR. I would have obviously already used the one time entry during my landing.

Yes, the visa your have is a one-time entry visa that you need for landing. Once you get your PR card, that will faciliate your re-entry into Canada and you need no other visa.
Your visa/COPR has an expiry date as you may have already noticed. You have to do your landing before that date. CIC will start processing your PR card only after you land. The card will be mailed out to the mailing address you provide during landing. 2-3 months appears to be a reasonable time to obtain PR card from what I see in this forum. You can check the current processing times from the CIC website as well, following the below link.

When you land do the officers give you any document like Proof of landing or one of the COPR back? I believe one of these are require when applying for citizenship?

Once the COPR documents are filled and signed by you and the officer, you get a copy to keep. Keep that safe as you'd need it when you apply for citizenship.
