If you worked in Canada from May 2016 to December 2016 - then you have around 8 months of Canadian work experience and need around 4 more to qualify for CEC. If you started working again in Feb 2019 in Canada, then you need to work until around June 2019 get the one year. By that time, you will no longer be able to count the work experience you gained in May and June 2019 since it will be greater than three years old. This is based on my understanding of the dates you have provided.
Full time is counted as 30 hours or more per week and you need 52 weeks full time (or the equivalent in part time work). If you are using the 1560 hour measure you can only count a maximum of 30 hours in any week so even if you worked 60 hours in a week you just count 30 hours. In addition it is 12 months qualifying work in the 3 years prior to your PR application not when you submit your EE profile.
As scylla said, you left it too late to return. On April 24th, 2019, you will only have 11 months of work experience in the past 3 years. At that point, the 2016 experience will start to fall out of the 3 year period.

A week anywhere in the world is 7 days and not Wednesday through Saturday .
There are obviously some countries where a week starts on a different day due to religious observance but ultimately a week is still 7 days long. So you cannot for example say you worked 30 hours from Weds through Sat and claim that as week of work as that would only be 4/7s of a weeks work. If you started work on a Wednesday then the week would be from Wednesday through the following Tuesday inclusive..
This is exactly the reason many on here would always recommend for CEC ensuring there are a few weeks/months buffer included in any CEC application to avoid complications such as this, so not to apply on exactly when anyone thinks 52 weeks have been achieved but slightly later to minimise chances of rejection.
The work experience for CEC is one year (or equivalent) in the past three years prior to your application.
So if you are applying on June 4, 2019, any work experience pirior to June 6, 2016 would not be qualifying hours. (One year is 365 calendar days according to IRCC.)
Don’t overthink all these numbers in your head. If I were you, I would just work two weeks to a month extra. There is no way you can outsmart IRCC. Getting rejected over this is just not worthy.
