I moved to Canada from Dubai in Jan 2021, but continued working for company in Dubai till March. They transferred the salary to Dubai account. Am I suppose to declare it for income tax purpose?

I did not declare it to avoid any tax on the salary I got in Dubai.
Since I don't have a job I have to submit bank statements to prove I can support my wife.

Question is that would the immigration officer notice and raise an issue saying you were earning but did not pay any tax?

Depends what your residency status in canada was for those two months.

I wouldn't submit those statements anyways. Since you are no longer employed there it doesn't matter anymore.

Received a reply from Vienna this time when I emailed LVO saying that application is in queue. Did anyone else’s case got transferred to Vienna or did anyone get any good news from there?

Curious. Wouldn't that be unlawful though? If you have moved to Canada on a certain date - in this case Jan 2021 and are a tax resident - then any income you earn while working from Canada should be reported. In fact, concealing would be a crime. Yes, very low to no chances CRA will ever catch you - but doesn't make it right imo. And in the off chance you are caught - you risk losing a lot just to save a few bucks.
