I have one more question- if I have had multiple positions within an organization (because I have been promoted), but I have been in the same NOC throughout, what should I note on the letter?
It can either mention all the multiple positions you've had in that organization or just your current position along with your overall tenure. In both cases, it will have to be explicitly mentioned that your NOC remained unchanged - that is the key requirement, positions/job titles don't matter.

I have equivalent to 2 years of experience in NOC B level but I gained the work experience while I was on a student visa in Germany. Does that count? Because I was reading somewhere it says anything you gain on student visa does not count towards job experience.

That is only if your experience was gained inside Canada while you were a student. If it is outside Canada ,you were paid for the job and you have all the necessary documents like experience letter, Tax slips if applicable, pay slips etc. It is considered as a wowk experience
