unfortunately, the safest time to do this is once you have eCOPR, work permits are generally bound to a single employer (unless you have an open one) and work permit applications are taking a pretty length of time at the moment.
I understand your situation at the moment- as I'm in the same boat with wanting to change employers but can't due to being on a closed work permit and not having eCOPR

You're like the 20th person I have seen that has applied in March and gone through the process in similar timeframes (with security check pending). Just wait portal 1 will come soon.

It's quite common for IRCC to ask for such documents for NON-EE application, I believe they ask for some of same documents (that you uploaded during your application fill) again to re-verify your eligibility based on the condition set as per province.

That's not the point. The point is: Does your nomination certificate list your employer? If it does, then forget about what permit you have. You HAVE to stay in that job until the day you're a permanent resident.

No, but your nomination certificate most likely does.
In that case, if you change jobs your nomination is no longer valid, and you have to update new info on your PNP. If your file is being processed by IRCC, they can flag you as no longer eligible because of that mismatch

If you want to quit your job and disagree with our advice, then go for it. Please just do it. DO IT! Just don't be surprised if the province comes back to you and tears up your certificate for your PNP application.

I actually never carefully looked at the nomination certificate. Now I see there is an employer listed. Safer to just stay with your current employer. (@moscatojuices relax buddy, we will soon nominate you to revamp IRCC...lol).

from MP to Portal 1, IRCC can still ask you for ADR such as pay stubs, employment letters, and all bank statements,... Would you risk everything to this point just because you couldn't work for a few more months until you have your PR card?

I will just say, and this is based on BC only, that if you apply under the stream which doesn't require employment, then you don't need to notify provinical PNP office about the job change. My stream doesn't require employment, my contract ended and later it was renewed. I emailed BC PNP and they return email quoting some sections in a technical manual that I haven't seen before and told me that I don't need to inform them of my (un)employment changes.
So I didn't.
However, if I was just "bored", I would still try and stick with my current job until PR arrives.

I am super annoyed today so sorry if it came out as aggressive. But when you mention "revamp", seriously it does. I can't imagine how some people are going through this process with abusive employers paying minimum wage and demanding they take no vacation time.
There was one poor guy from Ontario whose PR and future in Canada is in jeopardy. He works in a manual labour job and his company doesn't want to pay the employer compliance fee so that he can get his work permit. He made a stupid decision of working for this company on a 3-year PGWP (minimum wage job) and now his permit expiring next month - can't apply for a new work permit because employer doesn't want to pay $230. Wow.
Yet they allow spouses - many who have never set foot in Canada - to come with an open work permit and grant them PR in 4 months after applying. The spouse could leave the sponsor the next day, and probably even before the PR grant if he/she already moved to Canada. But someone in the PNP class has to sit out with their potentially awful employer for years.
