I am filing my application for the express entry and am stuck as i am unsure how much work experience i should enter. I have worked for a company for 2 years 7 months and immediately moved on to another company where i am working for the past 7 months. So will my work experience be the total of both companies that is 3 years 2 months or the express entry requires work experience to be in continuity. It would be of great help if anyone could help me with this.

12 months continuous experience is required only in case of one job. I mean you should have at least one job with 12 months continuous experience. Rest can be in bits and pieces

"Continuous" doesn't mean it has to be the same job.
It means there shouldn't be any gap in your 1 year continuous work experience minimum requirement in one given NOC. Not one job.
It can be two jobs back to back, with one starting the day after the first one is over.
For example, one can have a first job starting on January 1st and finishing on June 30, and the second job starting July 1st and finishing on January 1st of the next year. That is considered as "1 year continuous work experience".

Fact of the matter is 2 yrs 6 months in one company and 6 months in another will count as a total work exp of 3 years for my CRS points calculator right?

its pretty difficult sometimes. The last day and day of joining vary sometimes, that's why thumb rule should be 12 months under one employer and one role. Makes life easy.

Of course, always a difference between theory and reality.
It's always safer to just stick to a same job for at least one year to lower risk.
But back to back jobs are fine as long as the break isn't more than just a few days.

Yes, just include both of them in work history section.
The rest goes in personal activity.
Again, work references for both jobs are therefore a must to claim 3 years.
