I'm currently in the process of gathering all of my documents together.
Are there any particular documents like passport, birth certificate etc. which require notarization from a Justice of Peace or equivalent?
I've gone through the visa checklist many times but it's missing information about which documents need to be signed of by a Justice of Peace or equivalent. Any help is much appreciated!

1. Read the country specific checklist. If it doesn't request a notarized document, then you just send a copy.
2. Note though translated documents require notarization.
