There are 2 addresses (to send the application to) indicated on the CIC website. A Recipient address and a 'Courier' address. What's the difference and which one should I use? Is any one of them more preferred over the other?

it's pretty self explanatory, one for sending as regular mail and another for sending through courier (fedex, ups, purolator, etc). obviously the courier is recommended because a) it reaches way quicker, usually in a day or two b) you will get a receipt and tracking number from the company by which you can check if your application was received by CIC. keep that receipt till the application is complete, in case you need to prove that you sent an application.
