Yes there are good chances that you might be rejected in the second stage if their is any problem with your supporting documents, background check or medicals they can refuse you.

Have you already submitted the documents to the visa office ? If not then you can attach an explanation statement with it advising that why its not notarized, normally they wont reject you because of documents being not notraized but they might ask you later to provide more evidence or a notarized contract which will just cost you more time.
Wait for the seniors response as well they will tell you what impact it could have on your application and what you should do.

As you have submitted the originals so thats fine, only photocopies are required to be notralized. Dont worry if they need any further documents they will ask you before making a decision.

I don't have contracts at all. No not notarized. No notarized. Nothing. Not for present occupation. Not for past.
Only reference letters, testimonies and materials I worked with.
And I am sure it will be OK. Because immigration officers are human beings and not computers.
If your contracts are credible enough as they are then why on earth they would not accept it?
Moreover those contract for the past experience, not even for present job!!!
If you REALLY put your trust in God you wouldn't worry so much.
