So my wife (Canadian citizen) and I (British citizen) are in the process of filling out the forms for spousal Outland sponsorship and have them submitted soon.
We are visiting Canada for a month in September to see the wife’s family. Our little one will be travelling with us, who’s application for Canadian citizenship certificate is underway.
As the British citizen will I have any issues visiting as a visitor at border control? Ie over stay risk etc

Almost certainly not. Take a copy of the sponsorship application and payment receipt, just in case.
Do not present it to CBSA unless you are asked or hit entry problems. You are just a tourist at this point.
My experience is that my Canadian spouse got more grief at primary inspection than I ever did while we were visiting Canada together in the past.
