Just received the "dispatched from the IRCC Office, to the Canada Visa Application Centre in CVO-NEW DELHI. "
It was in Process since Feb 3rd at IRCC and this is for PR Spousal Category with dependent Child.
Can anyone let me know how long will it take from here to receive the passport? Thanks!

Does the passport return/COPR confirmation notification processing also happen on weekends?

Yes. All trend that I've seen so far shows that the dispatch SMS is recieved between 8am and 9.30am every day.

So disheartening to see why our passports are stuck since almost a month.

Thats what I am assuming as well. Also there's no way to get in touch with IRCC via phone as well, which makes it worse.
