I am going to help my spouse apply for a tourist visa extension and I am wondering if sending a copy of my pay stub of my full time job would be proof enough to show that I can support her during the extra timed asked? Or would I have to send a bank statement showing savings? A credit card statement with my limit?
I would like to know what would be the items I could send to possibly guarantee an extension approval?

As well as a pay stub, get a letter from the company you work for, clarifying your role, your projected income for the next year (or month, however you've paid) and saying how long you've been there. Pay stubs can be one-offs, but letters on headed paper hold more weight and detail about your job and income.
I'd also submit proof of current savings.
As said before, there's no guarantees with this immigration stuff - you just have to be honest and provide the strongest case you can! Good luck! ;D
