I’ve experienced delays with the background check for a previous visitor visa, which took over 8 months. I’m concerned that the study permit background check might take a similar amount of time, which could make my scholarship at risk.
Any advice?

Since you have deferred to summer, you should be fine. It also depends on your country processing time for SP. Another alternative is to do upfront medical if you are comfortable doing it. That way you don't waste time booking for medical.
