Is it mandatory to mention Spouse Foreign experience in EE profile when i am not claiming any points for that.
I just want to avoid the hurdle of getting Employer reference letters for spouse.
If youre not claiming any points, in my view, it is not necessary to mention the foreign work experience...

No, you don't need to mention it. Spouse's foreign work experience does not bring you any points anyways.
