Would it really be a problem to show up at the landing interview and my passport says my married name and the PR documents were submitted with my maiden name? I am the sponsor.
Or, is it a big deal to submit a name change to CIC?
It is best to update CIC ahead of time with a scanned copy of your updated passport. That is what my wife did and she got COPR in her married name even though she applied with her maiden name.
Also, I haven't changed my passport as i just got this one and don't really want to start the whole passport application process over if its not a big deal.
I just figure, CIC is disorganized enough, why make it more difficult for them on our application....
I applied with maiden name and my passport says maiden name so does my birth certificate. All my other docs are in my married name tho

As keesio mentioned, it's really simple to have CIC update a name to reflect a married name. The fastest way is to submit a case specific enquiry with a scanned copy of your passport.
That being said, since you are the sponsor it shouldn't make a significant difference (while it does show up on the CoPR if you land at a border post they won't even look at the sponsor passport).
ETA - just saw your newer post. To change your name you would need to send updated official documentation (e.g., passport), so either leave your maiden name on the application (and CoPR) or update your passport and then mail in a copy. If you decide to update everything now (a good idea so all your documents match up...), it shouldn't lengthen the application process at all so don't worry about it on that end.
