photo copy of a licence probably no use. Out of interest Who checks or takes licence off you when you leave home country do they wait at passport control and strip licence off you or is it voluntary if the latter why not keep it.

I have to surrender my driver's license to my sponsor that I am working for. I'm residing in a country that is not my country of citizenship!

Will they not verify my license somehow? Or is the onus on me to prove my driving experience?

In that case, wait until you are no longer working for him and get your license back. The onus is on you anyway to prove your driving experience and for that you need a driving abstract as well as your license.
