Yeah status should change to one of those but again do not read too much in to those statuses. They depend on how diligently an agent is updating the system ... do not reflect progress on your file in any way.
Is the processing or waiting time dependent on the stream of the applicant? From time to time i get to see the other threads and i noticed somem do get lucky in terms of lesser wait times, i know nothing is definite but just wondering if the stream is indeed a factor?
I think there is a difference surely. PNP is taking more time than the usual Express Entry profiles. CEC applications take much less time. I have noticed people say that the process also depends on the country you apply from but honestly I am not sure about this one.
