I think many might be in the same situation as I am.
I'm a self employed musician since 2015, is the following enough as evidence?:
- Free profession registration certificate (+translation)
- Fiscal declarations (2015,2016,2017,2018,2019) (+translation)
- Copies of POS terminal statement (payments I've received from customers through my POS machine at my office)
- Copies of cheques I've received for various musical related works I've done
Or should I go the extra mile as well and take screenshots and give links of my social media artist/musician pages?
I'm not sure how much is "enough" for IRCC to accept my work experience.

You might want to add a few reference letters from your clients as well, which covers the below requirements:
if the applicant is self-employed, articles of incorporation or other evidence of business ownership, evidence of self-employment income and documentation from third-party individuals indicating the service provided along with payment details (self-declared main duties or affidavits are not acceptable proof of self-employed work experience).
You might want to add a few reference letters from your clients as well, which covers the below requirements:

I've read this, I am avoiding (at least for now) to let my clients know that I wish to immigrate as this might back fire on my business. Also these clients are private individuals and not companies which also make things harder for the reference letters to be believed!
But if I have to include those letters, then I guess I have no other option.
However do you think my social media can be an additional proof? Posters of some of my performances (on my pages and others' pages) + videos of my performances.
