I received an ITA in July 2024, which was based on having two years of Canadian work experience. However, during that time, I spent three months in India on a paid vacation.
Will those three months of paid vacation still count as Canadian work experience?

Absolutely NOT! That was an unreasonable time out of the country. Standard paid leave is 2 weeks and all days are counted towards CEC. You made the wrong decision spending 3 months in India, you can explain this in your application. But beware, 3 months vacation (paid or not) is not the same as 3 months due to illness or receiving medical treatment, or forced detention. Good luck explaining that.
If you have the valid 1560 working hours in that year, then you are good
