I am currently working for a lab as an outsource staff. My question is who gives me reference letter, should my company or the company I was deployed to write the reference letter ? The company I was deployed to knows a lot bout my duties and responsibilities but they don’t pay my salary

The lab doesn’t pay me , it’s my company that pays me , if I get my company to write the reference , will it be accepted by IRCC? And also don’t I need to get any form of reference from the lab ?

Since the outsourcing company pays you(and not the lab), your reference letter should be from the outsourcing company. Make sure you aren't self-employed though.
If you are not self employed, all you need is your reference letter to prove everything. We usually attach 2-3 paystubs/payslips to the same employment PDF to provide more evidence, but that's not mandatory.
I have all that , my statement of account showing my salary inflow , my payslips , employment letter and all . I am only concerned bout the reference letter from my company, I doubt if it’s gonna state all of my duties. What if I manage to get additional reference from the lab ?

Why do you need additional reference from the lab? It is not required. You only need an employment reference letter from your company. As I said, it is more than enough. If you are feeling unsure attach your payslips/paystubs and you should be good.
