The letter can be issued by Managing director/Production manager/Operations manager/Planning manager/HR manager/HR employee/Supervisor.Yes your letter is acceptable.

Pls could you suggest if one letter from the employer stating the job dates, designation, duties, salary, department etc.. would suffice for a single employment or do we have to submit the payslips, contracts, appointment letters etc.. for every employment? I can get a very recent reference letter for every employer, for me and my spouse(at least a letter from them confirming the employment), but not sure if we can track the payslips and employment contracts that are more than 7 years old .

It does not matter. The person who issued you a letter his details must be obvious on the company letterhead. Canadian High Commission will contact to that person in order to verify your documents. The logic suggests your director has issued a letter because he is 100% sure about your jobs duties. If he is unsure he has spoken to the manager or supervisor first and your letter has been issued accordingly. For example,
