Does your spouse have Canadian Work experience? I am asking this because spouse's work experience is considered only if it was gained in Canada. Otherwise, they give you no points whatsoever.
You can claim points for dependent's work experience only if that experience was gained in Canada. Otherwise, you do not get any points. Why even bother mention a job that doesn't get you any points?

If you mention a foreign degree for your spouse and you do not submit a ECA for it, your application might be refused. Please remove that too. Only retain things that you have proof for.

Yes. There is no logic in including anything that will not give you any points (let alone the risk of being refused). Please do not mention anything in your application that you do not have documentation for. Better safe than sorry.

But please be advised that you might need to still retain this information in the personal history section AND/OR the address history section (If the experience/study was in the past 10 years). You can remove the work experience and the education from the Employment history section and the Education History section alone.

I don't think you would be awarded points for her education if you included her education details and selected "No ECA". You can use the CRS tool on CIC website to play around with both options. I see no reason why CIC would reject your application over "points you did not claim"
For her work experience, include those details under Personal History, that way, the system would not prompt you to upload any supporting document. If you detailed her work experience under Employment section, the system may assume you want to claim point for the entry and as such, prompt you to upload necessary documents.
