"A copy of the inside back cover if the inviter's passport showing the inviter's parent, if applicable?"
What does this mean? FYI: My parents are also providing her with an invite letter in addition to mine. Everything will be notarized.

This does not apply to you. Notarization serves no purpose unless required by the Visa office.
Keep in mind that she is the one that has to prove she has resources to travel. Sponsors and invitors are irrelevant is main applicant cannot show strong ties to come country and financial stability.
You do not "need" to do it, but it would be a good idea to establish the nature of the relationship, as claiming something that cannot be proven makes your application weaker.

Cool, what I wrote was. She's my girlfriend and I explained the nature of our relationship. I explained that I want her to come visit to meet my family etc. We've travelled together and we've documented that in the letter. I'm going to provide some photos of our travels together etc. Also, my mother also wrote her an invitation letter.
