So my wife and I are finally ready to send in her PR application. However, we also need to apply for another visitor extension for her. The last extension she received said that to get another extension, we need to submit proof that she has applied for PR.
What would constitute proof? Would sending in a copy of the receipt we printed be OK, or should we send something else?

Copies of your receipt should probably suffice. If you get the parcel signed for when you send it you could use that as well might be a bit overkill though!
if you apply outland and she has some time to wait till get a sponsor approval letter from CIC, that would satisfy them .
It took me around 40days to get sponsor approval letter ( including christmas, new years holidays )

The receipt should be fine. By the time they get around to looking at the visitor extension app, the PR app should be showing in the system anyways.
I sent in the payment receipt about four different times for various visitor extensions (we had some delays sending in the actual application). At one point they asked for proof that a medical had been done, so if you have the form or receipt for that, you could put a copy of that in, too.
