Just received my ITA yesterday and had a couple of doubts related to the proof of funds -
One of the accounts in question from which I will be showing funds is held jointly by me & my wife. In that case, would a statement of balance be enough or is something else needed?
The other account is held solely by her (her salary account) and I will be showing proof of funds from that as well. Since she is the co-applicant in the PR application, would there be any affidavit or other documentation I would need to show in addition to the statement of balance in this case?

You would require a bank certificate which mentions all the details which mentions the account name, account number, average balance for last 6 months and current balance in the local currency. You can also ask them to mention the Canadian Dollars equivalent of this current balance (not a must though). Along with this, you require the bank statements for last 6 months.
