If pharmacy assistant is your job and your employment letter says your duties are an assistant, then yes.

No. Your duties must match the NOC. You are a pharmacist trying to change your NOC to assistant. Not sure why you are trying to do that but would be misrepresentation.

Do you mean work as a pharmacy assistant in Canada? Did you read the Express Entry requirements for PR? If not, do so.

Yes, if eligible and your CRS score is high enough. You cannot work as a pharmacist unless licensed.

The EE healthcare draw doesn't contain pharmacist as in demand oocupation it has pharmacy technician assistant and pharmacy assistant in demand

As long as you have one year of continuous, full time experience in that NO. Your score would not be high enough for current draws and the program may change before you are eligible so keep that in mind.
