Is it possible to stay in Canada and continue working under maintained status while my PGWP extension application is being processed?

If you applied before the last one expired, yes

Okay, then what we have to show to the employer as a proof? because I made on-paper application and haven't linked to the GC key account.

You’ll get an AOR otherwise you can find it in the official website where they say you can still work. I showed them that and they said it was fine. I also got it written from a reply from IRCC web form so they replied to me that I can keep working.
