Friends, i have work experience but i was paid cash so i dont have any pay slips to prove but i have work contract and experience that is assessed by the embassy of my country and affairs government

It mean that you are not asked to submit it with your application. But if you want to you can it is a added bonus. Even if you dont submit it does not mattet as it is not a mandotary document to submit. If they want payslips they will ask for it.

Like I said, only ref letter is mandatory.
1. In one of my jobs, I was a temporary employee for a few months, before getting on to payroll. So for the initial period, I did not receive payslips (direct bank payment) and I have payslips for the remaining period. The employer reference letter explains this. I plan on showing bank statements for the initial period and some payslips for the payslip period- is this ok or asking for trouble?
2. In another job, I've worked for two years. I have all the monthly payslips but attaching them all will result in a big file. Can I simply attach a few (e.g. first, mid-point and last) to back up my employer letter?

1- It's fine, a lot of people only include the pay stubs of their last few months of work.
2-You can OR you can use a pdf compressor.

Thanks for your support. I was going to include only the last few months, but I realised that my payslip quotes cumulative salary till date, so it would be obvious that some months are missing from that. The question is whether I'm digging my own grave by attaching a long story and providing bank account statements etc. Perhaps they may think feel suspicious that I'm going to great lengths to explain something that isn't even mandatory? Or alternatively they feel glad that I've been fully comprehensive and pre-empted any queries?

If I were at your place and if I had a complete refference letter i would have gone with it only. Because it is a only mandatory thing they need. It can create suspicion that why you are over doing it and why are you so desperate. If you have additional documents you can provide them whenever they ask. But doing it pre maturely can create suspicion because its not mandatory so they will not reject you by not providing additional docs. They can ask for additional docs whenever they need.

Honestly if you have a ref. letter that follows all the requirements I would only upload that.
If anything it seems that if for some reason they ask for more information you will be able to provide it.
