I need to renew my passport to complete my landing interview (as it will have less than 6 months left).
IRCC has finished processing my application and I am awaiting an appointment from the Vancouver office to land.
So I am wondering what happens if I renew and show up to my landing interview with a new passport that will be different to the one they had in my application.
Should I still upload it via the web-form? Make copies of the old one to take to the interview? Or will it be a non-issue?

What is the problem with 'six months left'? Canada has no such problems with that (are you from the UK? As it is the UK that is freaky about that, not Canada).
In any event, if for whatever reason you do decide to renew your passport, then yes, send it in via webform. Also as a precaution, take you old one in with you anyway, that way you will have all bases covered.

I am from the UK but I'm already residing in Canada. I was told that when I go for my landing interview that I'd need 6 months+ for them to complete the process. I have to send my old one back to the UK but they do return it. I just hope it's in time.

It doesn't say anywhere about the 6 months. I just checked my landing letter and it says bring a valid passport. You should be perfectly fine but if you wont receive it on time you would have to move your landing interview to even later date.
