Could you please share minor sample Employment Letter as you mentioned in your post ?
Also, the same sample Employment Letter for housewife, if you have any ?

Is it required to be same photos for Minor consent form as parents OCI photos ? I didn't know about consent form as both parents are going for application, hence didn't take extra pic for consent form.

sir, no employment letter needed for minors (i think i mentioned this earlier too - even if you submit any "proof" etc., they return it)
for home maker, again as stated earlier - take one self declaration she's a home maker, but chances are that too won't be needed
parents' pic - as mentioned earlier as well, needed, and as per OCI specs. CONFIRMING this for Toronto and Mississauga.

Finally decided to apply for OCI, couple of questions.

1. Is employment letter mandatory? I don't have a satisfying letter with all details. Read mixed feedback with some saying not required.

2. How much extra do they charge (above $375)? If I don't use premium service for $100 and refuse postal delivery, there is no other charge right?

3. Can I use debit card for OCI payment?

OCI on self basis should not cause any issue. Your wife may not be able to get OCI.

OCI on self basis should not cause any issue. Your wife may not be able to get OCI.

I've heard that even for me the consulate tries creating issues? Is this true? Wife for sure is not eligible for OCI, and not worried about that.

Better to check with the Consulate or the High Commission first, if and only if they confirm that you are eligible to apply for OCI, then only apply.
