The letter of funds from your bank should be 1 or maximum 2 days prior to your date of submission of the ITA documents. I doubt if the noc from your wife would work unless she too is an applicant (that too I am unsure). To be safe you can ask her to park that money in your account.

As per my experience, every letter from the bank has a validity until which the letter can be used. In my case, the validity was of 15 days. However, if you don't have the same on your letters, it is better to have the latest letters.
Had it been me in your case, I would have not gone ahead with the letter any older than 7-10 days.
