Though my app originally delievered on Nov 23 but then returned for a missing doc. App resent and delivered on Dec 28. The package states that my and my spouse app is complete but not for the child and I need to add a doc and resent the package back. Do you think this may cause delays in my AOR?
Also, my child's India passport is expiring in Sept'2018. I was wondering whether I need to renew it by the time citizenship case is in process?
It depends on the local CPC which will be handling your file. Typically 2-4 weeks, some take longer. Please refer to the spreadsheet (link in my signature).
"In process" means that your file has been transferred From CPC-Sydney to a local case processing center located near your home address. Your file has now begun real processing and will undergo background, eligibility, criminality etc checks.
Looking at other threads, "In Process" now-a-days not only means your application is sent to local office, it also means your application may also be picked for a (supposedly) "random pre-test audit" right there in Sydney.....more and more case are getting it now.

I have a question though, My parents PR card just expired, and we have some travel plans mid May. Their application was just confirmed received last week. Originally, I wasnt planning on renewing their PR Cards, but because of the current wait time, I am thinking of sending their PR renewal this week. What do you guys think?

You don't have to if you do not want to. Let them know during your interview/ test that you do not intend to renew passport after Sept'18 and would wait for Oath and Canadian passport. You can cite reasons as you do not plan to travel and save money for renewal.
