Will CIC and VO be using email as primary means of communication, right? because I am unable to check my application status on ECAS.

CIC & VO will communicate with u via email. Once you have ur UCI #, you can track ur application on ecas.

I emailed VO telling them about my travel to Thailand on vacation and asked them do I need to send the updated travel form again

lets see what they reply

it was a 5 days travel on Visa on Arrival

Do this can slow my visa process?

I think no need to info them because in travelling form you should mentioned where you spend 6 months or more.
